Parmesan Baked Zucchini
Instructions

Preheat the oven to 400°F.

Line a large baking sheet with parchment paper.

Cut the zucchini into 1/4-inch-thick slices and arrange in an even layer on the prepared baking sheet.

Drizzle zucchini with the olive oil and sprinkle with the salt and black pepper.

Use a rubber spatula to toss zucchini until evenly coated in oil and seasonings. Sprinkle the grated Parmesan evenly over the zucchini.

Roast the zucchini on middle rack of oven, flipping slices halfway through cook time, until it is fork tender and golden brown, 18-22 minutes.

Check to see that zucchini is done. Remove from oven or add time as needed.

Serve immediately.
