Tips & Tricks (5)
- Master the Cheese Sauce Temperature 🧈Keep your sauce on medium-low heat and add cheese off the heat to prevent breaking; return to low heat only to melt, stirring constantly for a silky texture.
- Use Pasta Water as Liquid Gold 💧Reserve at least 1 cup of starchy pasta water before draining—add it gradually to your cheese sauce to achieve the perfect consistency and help emulsify the sauce naturally.
- Layer Your Cheeses Strategically 🧀Add milder cheeses (mozzarella, cheddar) first to build the base, then fold in pepper jack last to preserve its heat and spicy notes without cooking them away.
- Toast Your Aromatics for Depth 🧄Bloom minced fresh garlic in butter for 30-45 seconds before adding cream to develop complex flavor that complements the heat of the pepper jack and chili flakes.
- Time Your Burrata Addition Perfectly ⏰Add burrata immediately after plating while the mac & cheese is still hot—the residual heat will slightly soften the creamy center without melting it completely into the sauce.
