Roasted Beets with Goat Cheese
Instructions
1
Preheat the oven to 400°F.
2
Line a large baking sheet with parchment paper. Set aside.
3
Peel the beets and chop them into 3/4-inch cubes. Arrange in an even layer on the prepared baking sheet.
4
Drizzle the beets with the olive oil. Sprinkle with the salt and black pepper. Use a rubber spatula to toss the beets until they are evenly coated.
5
Roast the beets on middle rack of oven, stirring twice through the cook time, until they are fork-tender and slightly caramelized, 45-55 minutes.
6
Check to see that beets are done. Remove from oven or add time as needed.
7
Allow the beets to cool for 10 minutes, then transfer to a serving dish and sprinkle with crumbled goat cheese and chopped fresh dill, if desired. Serve immediately.

Tips & Tricks (5)
- Choose Uniform Beet Sizes 🎯Select beets of similar size before roasting to ensure even cooking and consistent tenderness across all pieces.
- Roast Skin-On for Easier Peeling 🧅Keep beet skins intact during roasting, then rub them off easily under cool running water after cooking for superior texture and retained nutrients.
- Toast Your Goat Cheese Crumbles 🔥Lightly warm the crumbled goat cheese in a 350°F oven for 3-5 minutes before serving to enhance its creamy texture and deepen its subtle tang.
- Add Dill at the Last Moment 🌿Sprinkle fresh dill only after plating to preserve its delicate flavor and vibrant green color that can fade when exposed to heat.
- Balance with Acid and Fat 🫒Drizzle warm roasted beets with a touch of quality balsamic vinegar before adding olive oil to cut through richness and enhance the goat cheese's brightness.
