Tips & Tricks (5)
- Pound Chicken for Even Cooking 🔨Gently pound boneless chicken breasts to a uniform ¾-inch thickness to ensure they cook evenly and prevent dry edges while waiting for thicker centers to finish.
- Pat Dry Before Saucing 🧻Pat the cooked chicken completely dry with paper towels before adding marinara sauce and cheese to prevent soggy bottoms and allow proper browning of the mozzarella.
- Fresh Mozzarella at the End ⏱️Add fresh mozzarella in the final 2-3 minutes of baking rather than at the start, so it melts gently without becoming rubbery or browning too much.
- Crispy Pepperoni Technique 🍕Pre-cook pepperoni slices for 2-3 minutes on a separate pan before assembly to render the fat and achieve crispy edges that won't turn soggy on the sheet pan.
- Use an Instant-Read Thermometer 🌡️Check chicken internal temperature at 165°F for food safety while avoiding overcooking, which is especially important since the sauce and cheese continue cooking after removal from heat.
