Preheat the oven to 425°F.

Place the chicken breasts between plastic wrap or parchment paper and roll or pound them to 1/2-inch thickness.

Spray a baking sheet with nonstick cooking spray. Arrange the chicken breasts on the pan.

Bake the chicken on middle rack of oven for 15 minutes.

Open the oven and flip the chicken over. Spoon the sauce over the chicken, top with the mozzarella, and arrange the pepperoni over everything. Continue baking until the cheese is golden brown, about 10 minutes.

Check to see that chicken is done. Remove from oven or add time as needed.

Let the chicken rest for 5 minutes before plating. Serve immediately.
