Tips & Tricks (5)
- Pat Dry for Perfect Texture 💧Pat cod fillets completely dry with paper towels before baking to remove surface moisture, allowing the exterior to develop a delicate, slightly golden finish rather than steaming.
- Oil Temperature Matters 🫒Warm your extra-virgin olive oil in the baking pan for 2-3 minutes before adding cod so it creates a flavorful base and prevents sticking without requiring added cooking fats.
- Precise Doneness Indicator 🎯Cod is perfectly cooked when it reaches 145°F internally or when the flesh flakes easily with a fork at the thickest point—don't rely on time alone as fillet thickness varies significantly.
- Lemon Juice Timing 🍋Reserve fresh lemon juice to drizzle over the cod immediately after removing from the oven rather than before baking, preventing the acid from breaking down delicate proteins prematurely.
- Salt Distribution Strategy 🧂Season cod generously with salt and black pepper just 10-15 minutes before baking, allowing seasoning to adhere while being short enough to prevent moisture loss from the delicate flesh.
