Season the cod fillets on both sides with the salt and pepper and arrange on the prepared baking sheet. Drizzle evenly with the olive oil.

Bake the cod on middle rack of oven until the fish flakes easily with a fork, 10-20 minutes, depending on the thickness of the fillets.

Check to see that cod is done. Remove from oven or add time as needed.

Transfer the fillets to a serving platter or individual plates. Squeeze fresh lemon juice over the fillets, and serve immediately.
