From the Cook
1/2
Oven-Baked Eggs with Cheese
Instructions
1
Preheat the oven to 350°F.
2
Spray a 12-cavity muffin pan liberally with nonstick cooking spray.
3
Carefully crack one egg into each cup, taking care not to break the yolks. Sprinkle 1 scant tablespoon shredded cheese over each egg.
4
Bake the eggs on middle rack of oven for 16-20 minutes, (the lesser amount of time for runny yolks and the longer time for solid yolks).
5
Check to see that eggs are done. Remove from oven or add time as needed.
6
To remove eggs from pan, run the tip of a knife around the edge of each egg and carefully lift it from the cup.
7
Serve immediately, seasoned with salt and black pepper to taste.

Tips & Tricks (5)
- Prevent Rubbery Eggs with Gentle Heat 🌡️Bake at 350°F rather than higher temperatures to ensure creamy, tender eggs instead of tough, overcooked curds that release excess moisture.
- Layer Cheese Strategically 🧀Reserve half your shredded cheese to sprinkle on top during the last 2-3 minutes of baking for melted, golden-brown cheese without it burning throughout cooking.
- Whisk Eggs Thoroughly for Even Cooking ✨Beat eggs for 30-45 seconds until completely uniform to ensure consistent texture throughout the dish and prevent pockets of undercooked egg white.
- Use Clarified Butter Instead of Cooking Spray 🧈Replace nonstick spray with clarified butter for superior flavor and a golden, slightly crispy bottom layer that adds richness to your dish.
- Season in Two Stages for Better Flavor 🧂Mix salt and pepper into the egg mixture before baking, then season the top again just before serving to enhance both depth and surface brightness.
