Roasted Parmesan Herb Sweet Potatoes
Instructions

Preheat the oven to 400°F.

Lightly spray a baking sheet with nonstick cooking spray. Set aside.

Combine the grated Parmesan, Italian seasoning, garlic powder, salt, pepper, and olive oil in a large mixing bowl.

Peel the sweet potatoes and cut into 1-inch cubes. Add to the mixing bowl and toss to coat in the oil mixture.

Transfer the sweet potatoes to the prepared baking sheet and spread into an even layer.

Bake the sweet potatoes on middle rack of oven until they are fork-tender, 30-35 minutes.

Check to see that sweet potatoes are done. Remove from oven or add time as needed.

Sprinkle with additional Parmesan cheese or fresh parsley, if desired. Serve immediately.
