Preheat the oven to 400°F.

Season the chicken thighs on both sides with the salt and black pepper. Place thighs skin side up in a 9-inch square baking dish.

Cut the butter into four cubes and place one on top of each chicken thigh. Sprinkle the Herbes de Provence evenly over the chicken.

Roast the chicken on middle rack of oven until skin is browned and crisp and chicken reaches an internal temperature of 165°F, 42-47 minutes.

Check to see that chicken is done. Remove from oven or add time as needed.

Transfer the chicken thighs to a plate and serve immediately.
