Lean ground beef, lots of veggies, and cannellini beans combine to make a satisfying and healthy soup that comes together fast. We added tender Swiss chard at the end for a shot of green, but you could substitute lacinato kale or spinach instead. Serve the soup sprinkled with Parmesan cheese, and offer garlic bread on the side. The recipe is a Yummly original created by Ivy Manning.

Tips & Tricks (5)
- Swiss Chard Perfection 🥬Chop Swiss chard stems separately and add them earlier in the cooking process, then add the leafy greens in the last 2-3 minutes to maintain their vibrant color and prevent overcooking.
- Bean Prep Mastery 🫘If using canned cannellini beans, rinse thoroughly to remove excess sodium and prevent a starchy texture in your soup.
- Flavor Layering Technique 🧄Toast your Italian seasoning in the pan with the ground beef for 30 seconds before adding liquid to intensify the herb's aromatic qualities and develop deeper flavor complexity.
- Ground Beef Browning Hack 🥩Don't stir the ground beef constantly - allow it to develop a nice golden-brown crust by letting it sit undisturbed for 2-3 minutes before breaking it up.
- Parmesan Rind Trick 🧀Save your Parmesan cheese rinds and drop them into the soup while simmering for an incredible umami boost that elevates the entire dish.
