If you thought you had to mash potatoes by hand to get a beautiful creamy texture, we have a surprise: A mixer can do an excellent job. But don't hurry the process — if you run the mixer too fast, the potatoes get overworked and won't be as fluffy. The addition of fresh chives adds a little surprise while keeping the mashed potatoes squarely in the classics camp, though you can leave them out if you prefer the potatoes plain. The recipe is a Yummly original created by David Bonom.

Tips & Tricks (5)
- Potato Water Magic 💧Reserve some potato cooking water before draining, as its starchy goodness can help adjust the consistency of your mashed potatoes if they're too dry.
- Low and Slow Mixing 🥣When using a mixer, start on low speed and gradually increase to prevent overworking the potatoes, which can make them gluey instead of fluffy.
- Butter Temperature Trick 🧈Cut butter into small cubes and let it soften slightly before mixing into hot potatoes to ensure smooth, even distribution and maximum creaminess.
- Potato Variety Matters 🥔Russet potatoes are ideal for mashing due to their high starch content, which creates a lighter, fluffier texture compared to waxy potato varieties.
- Chive Chopping Pro Tip 🌿Use kitchen scissors to finely and quickly chop fresh chives, which helps release their delicate flavor more evenly throughout the mashed potatoes.
