Garlicky Vegan Collard Greens
Instructions
1
|
Preheat the oven to 300°F.
2
|
Set a large Dutch oven or oven-safe pot over medium heat and pour in the olive oil. Once oil is hot, add the onion. Saute until the onion is lightly browned and softened, 4-5 minutes. Add the garlic and saute until fragrant, about 30 seconds. Pour the broth into the pot to deglaze the bottom.
3
|
Add the collard green leaves to the pot one handful at a time, stirring to coat in the broth and onions. Cook, stirring constantly, until the greens have wilted down, 4-5 minutes.
4
|
Add the apple cider vinegar, sugar, hot sauce, salt, and black pepper and stir into the greens. Place a lid tightly on the pot.
5
|
Bake the collards on middle rack of oven until they are very dark green and soft, 75-90 minutes.
6
|
Check to see that collard greens are done. Remove from oven or add time as needed.
7
|
Stir the buttery spread into the collards, and serve immediately.

Tips & Tricks (5)
- Leaf Prep Pro 🥬Remove tough stems by folding the collard leaf in half and slicing out the thick central rib, ensuring tender and evenly cooked greens.
- Garlic Intensity Hack 🧄Crush garlic cloves and let them sit for 10 minutes before cooking to maximize their health benefits and develop a deeper, more complex flavor profile.
- Liquid Gold Technique 💧Use a combination of vegetable broth and apple cider vinegar to tenderize the greens and create a rich, tangy braising liquid that infuses maximum flavor.
- Low and Slow Magic 🔥Simmer collard greens on low heat for 45-60 minutes to break down tough fibers and develop a melt-in-your-mouth texture typical of traditional Southern-style greens.
- Flavor Layering Trick 🌶️Add hot sauce in stages during cooking to build a complex heat profile, allowing the spice to meld with the other ingredients without overwhelming the dish.
