Small chunks of orange along with two kinds of citrus zest give bright, fresh flavor to traditional cranberry sauce. You can make this several days ahead if you like — it keeps well in the refrigerator for a week. The recipe is a Yummly original created by David Bonom.
5 Ingredients
Instructions
1
|
Finely grate 1 teaspoon orange zest and 1 teaspoon lemon zest and combine in a small bowl. Save remaining lemon for other uses.
2
|
Cut the rind and outer white membrane from the oranges, following the curve of the fruit. Cut between the inner membranes to remove orange segments. Cut each segment into thirds and transfer to the bowl with the citrus zest.
3
|
Combine the cranberries, sugar, and water in a medium saucepan over medium-high heat. Bring to a boil, stirring occasionally. Cook until all cranberries have popped and mixture thickens slightly, 8-10 minutes.
4
|
Stir in the orange segments and citrus zest. Remove from heat and cool cranberry sauce to room temperature.
5
|
Chill sauce at least 3 hours before serving to thicken.

Tips & Tricks (5)
- Zest Technique 🍊Use a microplane grater to carefully remove only the bright outer layer of citrus zest, avoiding the bitter white pith underneath.
- Cranberry Consistency 🥄Gently stir the sauce while cooking to prevent burning, and stop when cranberries have burst and the mixture starts to thicken naturally.
- Citrus Balance 🍋Add citrus zest and juice incrementally, tasting as you go to achieve the perfect bright, tangy flavor without overwhelming the cranberries.
- Make-Ahead Magic 🧊Let the sauce cool completely before refrigerating, and store in an airtight container where it will develop even more complex flavors over 2-3 days.
- Textural Control 🥄For a chunkier sauce, reduce cooking time slightly; for a smoother consistency, continue cooking and gently mash cranberries against the side of the pot.
