Preheat the oven to 375°F.

Line a large baking sheet with aluminum foil or parchment paper.

In a medium mixing bowl, combine the brown sugar, maple syrup, black pepper, and cayenne pepper. Stir well to form a thick paste.

Add the bacon to the bowl. Toss with tongs until bacon is coated in the maple-brown sugar mixture.

Arrange the bacon strips in a single layer on the baking sheet.

Roast on middle rack of oven until bacon is a deep brown and crispy around the edges, 20-25 minutes.

Check to see that bacon is done. Remove from oven or add time as needed.
