From the Cook
1/2
Easy Roasted Garlic
Instructions
1
Preheat the oven to 400°F.
2
Remove the papery skins from the outside of the garlic heads (do not separate the cloves). Slice the pointed tops from the heads, creating a flat surface exposing the cloves.
3
Cut four square sheets of aluminum foil. Place one head of garlic cut side up in the center of each sheet.
4
Drizzle the heads of garlic evenly with the olive oil and sprinkle with the salt.
5
Wrap the aluminum foil tightly around each head of garlic. Place the heads on a baking sheet.
6
Roast the garlic on middle rack of oven until a toothpick easily pierces the cloves, 45-50 minutes.
7
Check to see that garlic is done. Remove from oven or add time as needed.
8
Allow garlic to cool for at least 20 minutes. Once garlic is cool enough to handle, unwrap the heads. Serve whole, or squeeze the roasted cloves from their skins into a bowl.

Tips & Tricks (5)
- Choose Fresh, Firm Garlic Heads 🧄Select garlic heads that feel heavy and firm with unbroken skin; avoid any with soft spots or sprouting, as these indicate age and will result in bitter, less creamy roasted cloves.
- Cut the Top Off for Even Roasting ✂️Slice off the top quarter-inch of each garlic head to expose the cloves evenly; this allows heat to penetrate uniformly and helps the creamy center develop consistently.
- Use Quality Extra-Virgin Olive Oil Generously 🫒Drizzle premium extra-virgin olive oil liberally over the exposed cloves and wrap the heads well; this creates a steaming effect that transforms garlic into silky, spreadable sweetness.
- Low and Slow for Maximum Sweetness 🕐Roast at 400°F for 35-45 minutes until cloves are completely soft and golden; cooking too hot will scorch the outer layers, while too low will dry them out.
- Store in Oil for Extended Freshness 🏺Keep cooled roasted garlic submerged in olive oil in an airtight container in the refrigerator for up to two weeks; the oil prevents oxidation and creates a ready-to-use condiment.
