Preheat the oven to 375°F.

Cut the bell pepper into 1/2-inch strips. Halve the onions and cut into 1/2-inch strips. Halve the potatoes.

Transfer the vegetables to a sheet pan and toss with the olive oil, salt, and pepper. Nestle the sausages in and around the vegetables.

Bake the sausage and vegetable on middle rack of oven until vegetables are tender and sausage reaches 160°F (165°F if it contains chicken or turkey), about 45 minutes.

Check to see that dish is done. Remove from oven or add time as needed.

Transfer the sausage and vegetables to a platter and serve hot.
