8 Ingredients
Instructions
1
|
Preheat the oven to 350° F.
2
|
Spray a 9x13-inch baking dish with nonstick cooking spray. Set aside.
3
|
Place two sheets of paper towels on a large plate. Set aside.
4
|
Place a large skillet over medium-high heat. Add the bacon and fry until brown and crisp, flipping once, 6-8 minutes.
5
|
Transfer the bacon to the paper-towel-lined plate. Do not discard the bacon fat.
6
|
Return the skillet to the heat and add the thawed hash brown potatoes. Cook, stirring occasionally with a rubber spatula, until slightly golden brown, 4-5 minutes. Remove from heat.
7
|
In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper.
8
|
Using clean hands, crumble the bacon into small pieces and add to the egg mixture. Add the potatoes and shredded cheese. Fold with a rubber spatula to evenly distribute.
9
|
Pour the mixture into the prepared baking dish.
10
|
Bake the casserole on middle rack of oven until top is golden brown and a toothpick inserted in the center comes out clean, 40-45 minutes.
11
|
Check to see that casserole is done. Remove from oven or add time as needed.
12
|
Allow casserole to cool for at least 10 minutes before serving. Cut the casserole into squares, or simply spoon onto plates.

Tips & Tricks (5)
- Bacon Crispness Perfection 🥓Pre-cook bacon until just crisp before adding to the casserole to prevent sogginess and ensure maximum flavor distribution.
- Moisture Control Magic 💦Thaw and thoroughly pat dry frozen hash browns to prevent excess water from making your casserole watery and ensuring a crisp texture.
- Cheese Layering Technique 🧀Sprinkle half the cheese in the middle layer and reserve the rest for the top to create pockets of melty goodness and a beautiful golden crust.
- Egg Whisking Pro Tip 🥚Whisk eggs with whole milk until completely smooth and uniform to guarantee a creamy, consistent texture throughout the casserole.
- Overnight Prep Hack ⏰Assemble the casserole the night before and refrigerate, allowing flavors to meld and reducing morning prep time.
